Palencia kitchens are new enough that the fitting problems which fill a day in an older neighbourhood barely occur here. What is left is the equipment itself, the ventilation, and getting the right part to a house 24 miles out.

## A full package, installed in one month

Palencia kitchens were specified as a set. Wall ovens, a range or a rangetop, a
hood, often a warming drawer and a steam oven, all chosen together and all
installed within a few weeks of each other. That is a good way to build a
kitchen and it has one consequence worth saying plainly: the appliances also
age as a set.

When the wall oven starts to drift, the hood blower bearings and the warming
drawer element are on the same clock. It does not mean anything else needs
replacing — most of it will run for years yet — but if we are already inside
the cabinetry for one job, five minutes spent looking at the rest is free, and
we would rather tell you what is coming than let you discover it one appliance
at a time.

## Ventilation is the recurring one

Take away the fitting problems and ventilation is what is left. A hood can only
exhaust as much air as the house is able to let back in, and houses of this era
are built to a tight envelope. The symptoms of a kitchen short on makeup air
are distinctive: interior doors that pull themselves shut when the hood is on
high, an exterior door that takes noticeable effort to open, and extraction
that is clearly worse than the blower's rating implies. Often the hood is loud
while moving very little air, because what you are hearing is restriction
rather than airflow. The residential code requires makeup air for kitchen
exhaust rated over 400 CFM for exactly this reason.

Before anyone quotes a blower on a 32095 hood call, the airflow path, the baffle
condition and the backdraft damper are worth checking. Frequently the blower is
the one part of the system that is fine.
