# What we fix — Wolf cooking equipment

We work on cooking equipment: ranges, rangetops, cooktops, wall ovens, convection steam ovens, warming drawers, coffee systems, microwaves, vacuum-seal drawers, ventilation hoods and outdoor grills. Wolf does not build refrigeration — that is Sub-Zero, a sister brand under the same parent — so a refrigerator call is not one we take.

## Dual-fuel range repair

A dual-fuel range is a gas cooktop sitting on top of an electric oven. The two halves share a control board and almost nothing else, so a burner problem and an oven problem on the same range are usually unrelated.

**What we get called for**
- The igniter keeps clicking after the burner has lit — Usually a wet or misaligned igniter electrode, or a burner cap that is not seated square on its base. The spark module cannot sense a flame it cannot see, so it keeps firing.
- Every igniter fires at once when one burner is turned on — That is normal behaviour for a single spark module driving all the electrodes. It becomes a fault only when the clicking does not stop once the flame is established.
- The oven runs cool or drifts away from the set point — Temperature drift usually traces back to the oven sensor, a tired door gasket, or a hinge that has sagged far enough to hold the door a couple of millimetres open along the top edge.
- One burner burns with a lazy, uneven or yellow-tipped flame — A partially blocked port ring. Boil-over dries into the ports and the flame goes ragged on one side of the cap while the rest of the ring looks normal.
- The oven has gone completely dead but the burners still light — The two halves of a dual-fuel range are separate systems. A dead oven with working burners points at the oven relay board, an element circuit or the 240-volt supply, not at anything on the cooktop.
- The convection fan rattles or howls when the oven is hot — Usually the fan bearing or a loose baffle behind the rear panel. It gets louder as the oven comes up to temperature because the shaft and the housing expand at different rates.

## All-gas range repair

An all-gas range burns gas on top and in the oven, so the oven has an ignition circuit a dual-fuel range does not. Most of the calls we take on these are ignition timing, blocked ports, or a safety valve that is no longer being told to open.

**What we get called for**
- The oven takes several minutes to light, then lights with a thump — A tired oven igniter. The igniter is also the current sensor for the gas safety valve, so as it ages it glows without drawing enough current to open the valve promptly. Gas pools while it tries.
- The oven does not light at all, but the cooktop burners work — The cooktop and the oven are on separate ignition systems. A dead oven with live burners usually means the oven igniter has failed open, or the safety valve is not opening.
- The igniter clicks on and on after the burner has lit — Nearly always a wet electrode or a burner cap seated slightly proud on one side. The spark module keeps firing because it cannot sense a flame that is not sitting where it expects.
- One burner has a ragged flame or will not hold a low simmer — A blocked port ring from a boil-over, or a cap that has been put back on the wrong base. Burner caps and bases are sized per burner and they do get swapped after cleaning.
- The broiler lights but the flame is patchy across the burner — Grease and carbon in the broiler ports, or a burner that has warped slightly from repeated heat cycling and no longer sits parallel to the deck.
- There is a faint gas smell for a second or two at ignition — Usually delayed ignition from a slow igniter or a partially blocked port, which lets a small amount of gas accumulate before the flame catches. It should be looked at rather than lived with.

## Rangetop repair

A rangetop is a professional gas cooking surface that drops into a counter with no oven underneath. Most of what we replace on them relates to the low end of the burner range, to griddle thermostats, or to valves that have stiffened with cooking grease.

**What we get called for**
- A burner will not hold a true low simmer any more — The low end of a dual-stacked burner depends on a very small, very clean flame path. Even light port blockage or a slightly off-square cap kills the simmer long before it affects the high flame.
- The knob is stiff, gritty or hard to push in and turn — Cooking grease works past the knob and into the valve stem, then bakes. The valve needs cleaning and regreasing with high-temperature valve grease, not household lubricant.
- The griddle runs hotter at one end than the other — Usually the griddle thermostat sensor has lost contact with the plate, or the plate has been run empty at high heat often enough to crown slightly in the middle.
- The charbroiler is slow to light or lights unevenly — Grease and carbon build up around the burner and the igniter on a charbroiler faster than anywhere else on a rangetop, and the igniter gap fills first.
- The igniters click continuously after the flame is established — A wet electrode or a burner cap sitting proud on one edge. The spark module keeps firing because it cannot sense a flame that is not sitting square over the electrode.
- The French top or griddle surface has discoloured in rings — Normal heat patterning on a solid cooking surface rather than a fault, though heavy rings can indicate the surface is being run dry at high output for long stretches.

## Induction cooktop repair

An induction cooktop has no flame and almost no moving parts, so when one misbehaves the cause is usually the cookware, the cooling airflow underneath it, or a power board that has been sitting in a hot, unventilated cabinet.

**What we get called for**
- The cooktop does not recognise a pan that used to work — Induction needs a ferrous base with enough contact area. Warped bases, thin clad pans and pans smaller than the element ring all read as no pan at all to the detection circuit.
- An element runs at full power then drops back on its own — Thermal cutback. The electronics under the glass are air-cooled, and when the intake or the exhaust is obstructed the cooktop protects itself by reducing power before anything is damaged.
- The touch controls stop responding or behave erratically — Capacitive controls read a film of water or a wet cloth as a finger. Persistent unresponsiveness after the glass is dry and clean points at the control board or its ribbon connection.
- The fan keeps running for a long time after cooking has finished — That is normal. The cooling fan continues until the electronics under the glass are back down to temperature, which can take several minutes after a long high-power session.
- There is a buzz or hum from the pan at high power — Usually the cookware, not the cooktop. Multi-layer clad bases can resonate audibly at high output, and lighter pans buzz more than heavy ones.
- The glass has cracked or chipped at an edge — Impact damage or, occasionally, stress from an installation where the cutout is tight and the top is bearing on the countertop rather than resting on its own supports.

## Built-in and wall oven repair

Wall ovens fail quietly. The temperature drifts, the door stops sealing along the top, the convection fan starts to sing, and none of it is obvious until baking goes wrong. Most of it is measurable in the first twenty minutes of a visit.

**What we get called for**
- Baking has gone wrong but roasting still seems fine — The signature of temperature drift. Roasts tolerate a 25-degree error and cakes, custards and bread do not, so baking always shows the problem first.
- The oven takes far longer to preheat than it used to — Either an element that is no longer drawing full current, a sensor reading high so the oven thinks it is closer to temperature than it is, or heat escaping past a door that no longer seals.
- The door does not sit flush and the top corner shows a gap — Hinge sag. Heavy oven doors put a constant load on the hinge pivots, and once they wear the door hangs a few millimetres open along the top edge where you cannot see it.
- The door stayed locked after a self-clean cycle — The door lock motor or its switch. Self-clean puts the latch mechanism through the hottest hour it ever sees, and a marginal latch fails at the end of that cycle rather than during it.
- The convection fan rattles, whines or grinds when hot — A worn fan bearing or a fan blade contacting its baffle once everything has expanded. It is often silent cold and loud at 400 degrees, which is a useful clue.
- The oven behaves strangely after a storm — Surge damage to the control or relay board. It presents as intermittent heating, a display that does not match what the oven is doing, or a mode that no longer works while others do.
- The interior light stays on or will not come on at all — Usually the lamp or the door switch. A door switch that reads the door as open can also stop convection or the broiler from running, so it is worth checking early.

## Convection steam oven repair

A convection steam oven is a conventional oven with a boiler, a drain and a humidity-tight door added to it. That is four more things to go wrong, and most of them announce themselves the same way: steam that is not what it used to be.

**What we get called for**
- Steam is weak, slow to build, or does not appear at all — Deposits on the heating element act as insulation. The element gets hotter, the water gets less heat, and steam output falls off gradually — long before anything actually fails.
- Water sits in the bottom of the cavity after a cycle — A restricted drain path or condensate channel. Everything that carries water away from the cavity is somewhere minerals and food residue can settle out, and it restricts long before it blocks.
- The reservoir empties much faster than it used to — Usually a door seal that has hardened and stopped sealing along part of its length, so steam escapes the cavity and the generator keeps making more to compensate.
- Cycles abandon themselves partway, or a fill never satisfies — Often the level-sensing arrangement rather than the control board. An oven that cannot measure its own water behaves in ways that look convincingly electrical.
- A descale cycle was run but the symptoms came straight back — A cycle strips the accessible deposits. Where a hard layer has been building for a year or more the rest stays behind, and the generator needs opening and cleaning mechanically.
- The oven runs but the food comes out drier than it should — Reduced steam output, sometimes from the generator, sometimes from a gasket that has hardened. Steam cooking is unforgiving of small losses in humidity.
- The control board fails after a storm — Steam ovens combine electronics with water, and surge damage often shows up as one mode that no longer works while the rest of the oven appears healthy.

## Warming drawer repair

A warming drawer is the simplest appliance in a built-in kitchen and the one people notice last when it fails. It holds a narrow, low temperature band, and almost everything that goes wrong is the element, the thermostat, the humidity vent or the glides.

**What we get called for**
- The drawer no longer gets warm at all — Usually the element or its circuit. Warming drawer elements run at low wattage for long stretches, and they fail open quietly with nothing to see and nothing to smell.
- Plates come out hot but bread comes out leathery — The moisture vent is open when it should be closed, or the seal around the drawer front is no longer holding humidity in. Warming drawers hold moisture as much as heat.
- Food dries out or scorches on the lowest setting — A thermostat or sensor drifting high. The whole useful range of a warming drawer is narrow, so a small calibration error is a large proportion of the setting.
- The drawer sticks, drags or no longer closes square — Worn or bent glides, usually from being loaded with a heavy stack of plates and pushed shut hard. A drawer that does not close square loses heat continuously along one edge.
- Condensation collects inside the drawer — Moist food held with the vent closed and the drawer opened frequently. It becomes a fault only when it persists with the vent open, which points at the vent mechanism itself.
- Proofing dough rises unevenly or not at all — Proofing sits at the very bottom of the temperature range, where sensor drift has the largest effect. A drawer that is 15 degrees high at proof temperature will kill the rise it is supposed to help.

## Ventilation hood repair

A professional hood is a blower, a duct, a set of baffles and a damper, and every one of those can be the reason a kitchen still smells of last night's fish. Coastal air and grease do most of the damage here.

**What we get called for**
- The hood is loud but the kitchen still fills with smoke — Noise without extraction almost always means the air is not getting out: grease-loaded baffles, a crushed or over-elbowed duct run, or a backdraft damper that is no longer opening fully.
- The blower has developed a rumble, whine or vibration — Bearing wear, or grease build-up on one side of the blower wheel putting it out of balance. An unbalanced wheel gets progressively louder and eventually takes the motor with it.
- The hood works but the doors slam when it is on high — The kitchen is short of makeup air. A high-output hood can pull the whole house negative, and the residential code requires makeup air for exhaust systems over 400 CFM for exactly that reason.
- Outside air, insects or cooking smells come back down the duct — A backdraft damper stuck open, corroded, or fouled with grease. On the coast the roof or wall cap is usually the first thing salt air takes.
- The hood lights flicker, fail early or will not switch — Heat and vibration are hard on lamps and their holders, and the switching side of a hood control lives directly in a stream of warm greasy air.
- The controls respond intermittently or a speed has stopped working — Usually the control board or the speed switching. Grease vapour migrates into the control housing over years and it does not do connections any favours.
- An external or in-line blower has become much louder — These are mounted in an attic, on a roof or on an outside wall, and they are exposed. Bearing wear plus corrosion in a coastal ZIP is the usual combination.
